Mysteriously Good Muffins
1 pkg. Devil's Food cake mix
15 oz. can pumpkin
Chopped pecans (optional)
Chocolate chips (optional)
1 tablespoon vanilla
I think mother made these by accident once. Then through some trial and error, came up with these simple and tasty muffins.
Preheat oven to 350 degrees F.
Grease 12 muffin cups or line with paper baking cups.
Mix cake mix with pumpkin (it's stiff -- so lots of work), add vanilla.
Drop into cupcake tin and sprinkle with chopped pecans and chocolate chips, if desired.
Bake for 20 minutes or until a wooden pick comes out clean.
