Heavenly Coconut Cream Pie 1 baked 9″ pie shell
2/3 cup sugar
1/3 cup corn starch
1/2 tsp salt
3 cups milk
4 egg yolks (slightly beaten)
2 tblsp butter (or margarine)
2 tsp vanilla extract
3/4 cup flaked coconut
1 cup whipping cream
1 tbsp confectioners sugar
1/4 cup toasted coconut flakes
Mix sugar, cornstarch, and salt together in sauce pan.
Blend milk, vanilla, butter, and egg yolks; then gradually stir into sugar mixture.
Cook over medium heat, stirring constantly, until mixture thickens and boils.
Boil for one minute, stirring constantly. Remove from heat.
Stir in coconut. Let cool.
Pour into pie shell and cover with waxed paper.
Chill thoroughly; at least two hours.
Whip cream together with confectioners sugar until stiff.
Spread evenly over pie and sprinkle with toasted coconut flakes.
Serve chilled.
