Easy Oreo Truffles

This is the easiest "truffle" to make. If I can do it, it has to be easy! These make great homemade gifts. And are easy to have on hand for those family gatherings. You won't believe how delicious these wannabe chocolate truffles are until you make some, or receive some from someone special (That's IF they divulge their secret!)
Ingredients
  • 1 pkg. (8 oz.) cream cheese, softened
  • 1 pkg. (1 lb. 2 oz.) Oreos (or some reasonable facsimile thereof)
  • 2 pkg. (8 squares each) Semi-Sweet Chocolate, melted
Instructions
  1. Set aside 5 Oreos and throw the rest in a food processor until they are finely crumbled.
  2. Thoroughly mix cookie crumbs with cream cheese.
  3. Form crumb-and-cream-cheese mixture into balls, approximately 1-inch across each and place onto a cookie sheet that has been lined with wax paper.
  4. For best results, pop the formed mixture into the fridge for at least 15 minutes to chill while you complete the next step.
  5. Melt the chocolate. I like to melt it in the microwave. Just use a microwave safe bowl and cook 30 seconds at a time until melted. But use your preferred method.
  6. Remove pot from heat (if you're using a pot).
  7. Coat previously formed balls with chocolate and return to the lined cookie sheet.
  8. Throw the remaining 5 cookies into the food processor until they are finely crumbled.
  9. Sprinkle some of those crumbs on top of the (still wet) truffles.
  10. Refrigerate for one hour.
You are done! You are now free to package, freeze, eat, and enjoy!
Options: Swap out regular Oreos for Golden Oreos (semi-sweet chocolate for white chocolate, if you like white chocolate). You will end up with a cheesecake-like truffle. Or try something you "think" might be good. Experimentation is how we get all these new recipes.

Simple - Quick - Bacon Cheeseburger Bites
Ingredients
  • 2 Cups leftover Cheeseburger Bacon Dip
  • 16 oz pre-made or home-made pizza dough
  • Olive oil for brushing
  • Garlic powder
Instructions
  1. Preheat oven to 350 F
  2. Place pizza dough onto a lightly floured surface; divide into 12-14 pieces.
  3. Flatten each sectioned portion into circle, and place 2 Tablespoons for cooled Cheeseburger Bacon Dip in the center. Bring edged together into the center and pinch to seal.
  4. Place 2 inches apart on greased baking sheet, brush lightly with olive oil, and sprinkle with garlic powder
  5. Bake filled dough bites in oven for 10-15 minutes, or until lightly browned.
  6. Serve warm with ketchup and mustard if desired.

Cheeseburger Bacon Dip

Perfect for parties, tailgating, or family night, this creamy, gooey, tasty dip is sure to please.
Ingredients
  • 1 pound ground beef (97% lean)
  • ⅓ cup bacon pieces (about 4 slices)
  • ½ cup onion, diced
  • 1 clove garlic, chopped
  • 4 ounces cream cheese, room temperature
  • ½ cup sour cream
  • ¼ cup mayonnaise
  • ½ cup mozzarella, shredded
  • ½ cup cheddar cheese, shredded
  • 2 tablespoon worcestershire sauce
  • 3 tablespoon ketchup
  • 1 tablespoon of bacon pieces for topping
Instructions
  1. Preheat oven to 350 F
  2. Brown ground beef in a pan over medium heat, drain any grease from meat and return to the pan.
  3. Toss in onions and garlic, sauté with ground beef until tender and fragrant
  4. Add cream cheese, sour cream, mayonnaise into meat mixture. Stir until well blended.
  5. Add worcestershire sauce and ketchup, stir until well blended.
  6. Fold in shredded mozzarella and pour into a baking dish.
  7. Top mixture with shredded cheddar and remaining bacon pieces.
  8. Bake in a oven until cheese is melted and dip is heated thoroughly, about 20-30 minutes.
  9. Serve warm with toasted baguette slices or crunchy pita chips.

 

Pull My Cheese Bread

A real crowd pleaser as guests pull apart this gooey cheesy bread. Set out some marinara sauce and let the dipping begin!
Ingredients
  • ⅓ cup of your favorite flavored dipping oil
  • 2 teaspoons garlic powder
  • 2 (16 ounce) pkgs pre-made or homemade pizza dough
  • 1 (7 oz) pkg sliced pepperoni
  • 1 (8 oz) pkg shredded mozzarella cheese
Instructions
  1. Preheat oven to 375 degrees F
  2. Separate pizza dough into small bite sized pieces.
  3. In a bowl add your favorite flavored dipping oil. Toss dough pieces in dipping oil to lightly coat.
  4. Layer dough pieces in bottom of bundt or fluted tube pan, next layer sliced pepperoni, shredded cheese and sprinkle with garlic powder. Repeat all three layers again in the same order, and then end with final layer of dough pieces.
  5. Bake in the preheated oven until the bread is browned and cooked through in the center, 30-40 min
  6. Remove from oven, and invert the pan on a cutting board; the bread will fall out of the pan in one piece.
  7. Serve by pulling the bread apart into individual servings with optional marinara dipping sauce on the side.
Fill the pan about ⅔ full. Don't worry if you make too much. This stuff is great re-heated!

A common question I’m asked when it comes to cooking is, “How do you make gravy?”. It’s a reasonable question. For if you never learn, you never know. I make gravy the way I stumbled onto so many years ago. I don’t remember what I was doing when I stumbled, but I’m happy it happened. It’s the easiest, full-proof method I know. And, believe me, I’ve tried a lot of methods! With that said, here’s my magic recipe for gravy. I refer to this process as creating stock-mix to add to your drippings.
Ingredients
  • All the drippings from whatever you're cooking.
  • A jar with a screw-on lid.
  • Cornstarch.
Instructions
  1. Since all recipes vary in size and stature, here’s the tricky bit – figuring out how much base you’ll need.
  2. What you’re going to do is place some cornstarch in the jar. How much depends on how much gravy you’re making. But you’ll never want more than ¼ of the jar. ¼ jar will make a TON. But sometimes we need a ton. And since it doesn’t cost to make too much stock-mix, it’s OK to make too much stock-mix.
  3. Add clear, clean water on top of the cornstarch to fill the jar ¾ to 9/10 full. Screw the lid on. And shake-shake-shake! Shake it up quick and well, then give it another shake. You want to make sure the cornstarch is completely mixed. Now you’re ready for gravy time!
  4. Place your drippings in a pot or pan and heat on high heat until boiling.
  5. Start adding your stock-mix, stirring constantly. Don’t add it all. Add just enough so that the entire mixture begins to have the consistency of heavy syrup.
  6. Serve hot.

Comfy Corn Bread

Just like grandma used to make. In fact, she's the one I learned this from!
Ingredients
  • 2 cups yellow cornmeal
  • 1½ cup flour
  • 2 teaspoons salt
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 3 eggs - beaten
  • 1 tablespoon vegetable oil (for skillet)
  • 2 cups milk
  • ¼ cup melted butter or margarine
  • melted butter or margarine for brushing top
Instructions
  1. Preheat oven to 425F
  2. Put oil in large iron skillet and place in the oven while making batter. (may replace skillet with 9x9 baking dish or 8x8 for a thicker batch)
  3. In large mixing bowl, combine cornmeal, flour, salt, baking powder, and baking soda.
  4. In separate medium mixing bowl, whisk together the eggs, milk, and butter or margarine.
  5. Combine egg, milk, and butter mixture with the dry ingredients until all is moist.
  6. Carefully lift hot skillet from oven and tilt to coat all sides and bottom.
  7. Pour in batter and return to oven.
  8. Bake 20-25 minutes, until browned. (toothpick inserted in center should come out clean)
  9. Brush top with butter.
  10. Serve warmly.

If you like Lowry's, you'll like my Grumpy's Groovy Granules. The kids call me Grumpy. My seasoned salt is far out and groovy. So it all makes sense now. This seasoned salt recipe is based off many attempts at creating something that works well for beef, poultry, fish, or fowl. Use it on all your outdoor grilling excursions and anywhere seasoned salt makes sense for you.
Ingredients
SAMPLE SIZE
  • 2 tablespoons salt
  • 2 teaspoons sugar
  • ½ teaspoon paprika
  • ¼ teaspoon turmeric
  • ¼ teaspoon onion powder
  • ¼ teaspoon cornstarch
SHARE & STORE SIZE
  • ½ cup salt
  • ⅛ cup sugar
  • 2 teaspoon paprika
  • 1 teaspoon turmeric
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon cornstarch
Instructions
  1. Mix all ingredients well. When making the "Share & Store" size, store in an air-tight container (I place my extra in the freezer).

For some old world eatin', try some of grandma's spoon bread. She'd throw this in the oven just before eatin' time and enjoy the fact there'd be no leftovers. If you know what you're looking for, you've found a great spoon bread recipe. If you're just out for a ride - enjoy the ride!
Ingredients
  • 3 eggs (separated)
  • 3 cps milk
  • ½ cp cornmeal
  • ½ cp flour
  • 2 tblspoons butter or margarine
  • ¼ teaspoon salt
  • ¼ teasspoon baking powder
Instructions
  1. In medium saucepan bring milk to a boil.
  2. Slowly whisk in cornmeal and flour.
  3. Simmer for 5 minutes, stirring smooth.
  4. Add butter, salt, and baking powder.
  5. Whisk or beat eggs well in a small bowl.
  6. Fold the eggs into the cornmeal mixture.
  7. Pour into a greased 1½ quart baking dish.
  8. Bake at 400 degrees for about 25-30 minutes or until set.
  9. Serve hot.
