This is the easiest "truffle" to make. If I can do it, it has to be easy! These make great homemade gifts. And are easy to have on hand for those family gatherings. You won't believe how delicious these wannabe chocolate truffles are until you make some, or receive some from someone special (That's IF they divulge their secret!)
Ingredients
  • 1 pkg. (8 oz.) cream cheese, softened
  • 1 pkg. (1 lb. 2 oz.) Oreos (or some reasonable facsimile thereof)
  • 2 pkg. (8 squares each) Semi-Sweet Chocolate, melted
Instructions
  1. Set aside 5 Oreos and throw the rest in a food processor until they are finely crumbled.
  2. Thoroughly mix cookie crumbs with cream cheese.
  3. Form crumb-and-cream-cheese mixture into balls, approximately 1-inch across each and place onto a cookie sheet that has been lined with wax paper.
  4. For best results, pop the formed mixture into the fridge for at least 15 minutes to chill while you complete the next step.
  5. Melt the chocolate. I like to melt it in the microwave. Just use a microwave safe bowl and cook 30 seconds at a time until melted. But use your preferred method.
  6. Remove pot from heat (if you're using a pot).
  7. Coat previously formed balls with chocolate and return to the lined cookie sheet.
  8. Throw the remaining 5 cookies into the food processor until they are finely crumbled.
  9. Sprinkle some of those crumbs on top of the (still wet) truffles.
  10. Refrigerate for one hour.
You are done! You are now free to package, freeze, eat, and enjoy!
Options: Swap out regular Oreos for Golden Oreos (semi-sweet chocolate for white chocolate, if you like white chocolate). You will end up with a cheesecake-like truffle. Or try something you "think" might be good. Experimentation is how we get all these new recipes.

Whether you're building appetizers or desserts, our Apple of a Pie not only has great eye appeal, but it's easy to make and sure to please.
Ingredients
  • 5-6 apples (They need to be firm and look good to stand on their own. I use nothing but Granny Smiths in my apple pie recipes.)
  • 1 teaspoon cinnamon
  • ¼ cup sugar
  • pie crust (either store brought or home made - your choice)
Instructions
  1. Pre-heat oven to 375 F.
  2. Cut off the top of 4 apples and discard. Remove the inside of each apple with a spoon or melon baller very carefully, as to not puncture the peel. If you’re a skilled interior apple excavator, salvage as much as you can so you can use it for Step 2. If you're not skilled, just throw the interior apples away and chop up additional apples for filling (that's why we have extra apples!).
  3. Remove skin from remaining apple(s) and slice very thinly. These apple pieces will give you the additional filling needed to fill the four apples you are baking.
  4. Mix sliced apples with sugar and cinnamon in a bowl. If you prefer more or less cinnamon or sugar, make adjustments as desired. But first time out, you'll likely want to follow the recipe.
  5. Scoop sliced apples into hollow apples.
  6. Roll out pie crust and slice into ¼ inch strips. You can also add a strip of pastry inside the top of the apple almost like a liner to add a little more texture/sweetness to the pie.
  7. Cover the top of the apple in a lattice pattern with pie crust strips (as shown in picture).
  8. Place apples in an 8×8 pan.
  9. Add just enough water to the cover the bottom of the pan.
  10. Cover with foil and bake for 20-25 minutes.
  11. Remove foil and bake for an additional 20 minutes or until crust is golden brown and sliced apples are soft.

Is it a cookie? Is it a pie? Is it a pie that's a cookie or a cookie that's a pie? Maybe - Just Maybe - it's a pie that tastes like a cookie. But with a brown sugar base with chopped nuts and chocolate chips, it's a sweet treat that's sure to please no matter which it resembles more!
Ingredients
  • 1 unbaked 9-inch deep-dish pie shell
  • 2 large eggs
  • ½ cup all-purpose flour
  • ½ cup white sugar
  • ½ cup packed brown sugar
  • ¾ cup (1½ sticks) butter or margarine, softened
  • 1 cup (6 oz.) semi-sweet chocolate chips
  • 1 cup chopped nuts (walnut, pecan, whatever-you-like)
  • Sweetened whipped cream or ice cream (optional - preferred by me)
Instructions
  1. Preheat oven to 325° F.
  2. Beat eggs in large mixing bowl on high speed until foamy.
  3. Beat in flour, white sugar and brown sugar.
  4. Beat in butter.
  5. Stir in chocolate chips and nuts.
  6. Spread mixture into pie shell.
  7. Bake for 55 to 60 minutes or until knife inserted halfway between edge and center comes out clean.
  8. Cool on wire rack.
  9. Serve warm with whipped cream or ice cream (again - my preference), if desired.

This will take you back to when grandma made apple crisp and everyone ate until it was gone.
Ingredients
  • 6 cups sliced apples (I use granny smith)
  • 1⅛ cup brown sugar
  • ¾ cup flour
  • ¾ cup quick oats
  • 1⅛ teaspoon cinnamon
  • 1⅛ teaspoon nutmeg
  • ½ cup softened butter or margarine
Instructions
  1. Heat oven to 375F
  2. Arrange apples in greased 8x8x2 pan
  3. Mix remaining ingredients - Sprinkle over apples
  4. Bake until topping is golden brown and apples are tender (about 30 minutes)
  5. Best when served warm. Add some cream or ice-cream if desired.

A simple pumpkin dessert that's sure to please the most discerning pumpkin eater.
Ingredients
  • 1 small (14 oz) can pumpkin
  • 2 cups vanilla wafers (crumbled)
  • 1 can evaporated milk
  • ½ cup chopped walnuts
  • 2 eggs (beaten)
  • ¾ cup sugar
  • ½ teaspoon salt
  • ⅛ teaspoon allspice
  • 1 teaspoon cinnamon
  • ¼ teaspoon ground cloves
  • ½ teaspoon ginger
Instructions
  1. Preheat oven to 425F.
  2. Place crumbled cookies in buttered 2 quart casserole dish.
  3. In mixing bowl, combine pumpkin, evaporated milk, beaten eggs, sugar, and spices until mixed well.
  4. Pour pumpkin mixture over cookies.
  5. Sprinkle nuts on top.
  6. Bake 15 minutes.
  7. Reduce heat to 350F.
  8. Bake 40-50 minutes or until knife inserted in custard comes out clean.

The easiest and tastiest rice pudding, straight from grandma's recipe drawer.
Ingredients
  • 2 cups cooked rice
  • ½ cup sugar
  • 2 eggs, slightly beaten
  • 2 cups milk
  • ½ teaspoon vanilla extract
  • ¼ cup raisins
  • ½ teaspoon powdered cinnamon
Instructions
  1. Pre-heat oven to 350F
  2. Place rice in bowl
  3. Add all ingredients
  4. Stir well
  5. Pour into greased baking dish or pan
  6. Bake about 25 minutes

This is old school short cake from a recipe handed down from my grandmother.
Ingredients
  • 1-1/2 cup flour
  • 3 tablespoons confectioner's sugar
  • 1 tablespoon baking powder
  • 2 eggs (beaten)
  • 1 cup milk
  • ½ cup butter or margarine
  • ⅛ teaspoon salt
Instructions
  1. Combine flour, sugar, salt, and baking powder in large mixing bowl.
  2. Cut in butter or margarine until mixture resembles small peas.
  3. In separate bowl, combine milk and eggs - add to dry ingredients until just moist (do not over stir!).
  4. Lightly grease bottom only of 8x8 pan.
  5. Pour batter into pan.
  6. Bake at 450F 15 minutes or until golden brown.
  7. Serve warm with your favorite fruit.

 

Chocolate-dipped Strawberries

Ingredients
  • 12 oz Semisweet chocolate pieces
  • 6 tb Butter or margarine
  • ½ ts Vanilla
  • Strawberries with stems
Instructions
  1. Melt chocolate pieces in top of double boiler.
  2. Blend in butter and vanilla.
  3. Dip strawberries in chocolate, swirling to coat evenly.
  4. Place on waxed paper and set in cool dry place.

If you love chocolate, you'll love chocolate cobbler. Serve warm with a scoop of vanilla ice cream and it's a hot fudge sundae with style!
Ingredients
  • ½ stick (1/4 cup) butter or margarine
  • 1 cup flour
  • ¼ teaspoon salt (omit if using self-rising flour)
  • 2 teaspoons baking powder (omit if using self-rising flour)
  • ¾ cup white sugar
  • 1 cup brown sugar
  • ⅓ cup + 1½ tablespoon cocoa (divided)
  • ½ cup milk
  • 2 teaspoons vanilla
  • 1½ cups + 3 tablespoons boiling water
Instructions
  1. Preheat oven to 350 F
  2. Melt butter in bottom of 8x8 pan or 2 qt baking dish.
  3. Combine flour, salt, baking powder, 1½ tblsp cocoa, white sugar, milk, and vanilla.
  4. Spoon batter into baking dish. -- Do not stir!
  5. Start water to boil.
  6. Mix brown sugar and ⅓ cup cocoa. Sprinkle over batter.
  7. Pour boiling water over all -- Do not stir!
  8. Bake 25-30 minutes. (Cake will spring back from touch when done).
  9. Serve warm. Top with your favorite ice-cream if desired.
  10. This recipe is easily doubled for a crowd. Just double all ingredients and use a 9x13 pan.
